The “Incredible, Edible Dress” wows pastry and chocolate chefs
What does a pastry chef secretly dream of creating? A sculpture made of fondant to rival Adonis? A pulled sugar tiara more perfect and delicate than the strands of a spider’s web? No, even more than those.
“It’s a chocolate dress,” says Paul Supplee, executive pastry chef at Lund Food Holdings, Inc. (LFHI), parent company of two high-end supermarket chains. When his employer sponsored a “You Are What You Eat,” fashion show at their upmarket Byerly’s supermarket here, Supplee saw the opportunity to fulfill his dream.
His Schokinag chocolate dress premiered in the benefit show that was staged as a classic fashion event in Byerly’s on a 48-foot runway built on top of cash registers, with stage lights and music. It closed the first segment of the show. Bathed in butterfat, the runway model was joined by a human buffet, a gummy hair girl, and another model wearing an elegant shrimp cocktail dress. The benefit was for youth outreach programs in Maple Grove, MN.
“I floated the idea of a chocolate dress by our public relations director at least five years ago,” says Supplee. “I’m always trying to think of things to do with food to get attention.” Even before it hit the runway, the dress gained notoriety.
“It got mixed reactions from the corporate staff. Some thought it was a great idea. Some had second thoughts because they felt like it would be too avant-garde, too risque,” Supplee says, adding, “Then there were those who feared it would melt, fall off and embarrass us and the model wearing it.”
Supplee used Schokinag Chocolate, a premium quality German chocolate “excellent both for its taste and physical properties.” He sculpted the dress onto a milk-chocolate colored tulle sheath worn by a turn of the century dress form in a vacant office at Byerly’s corporate headquarters.
“Twenty five years of working with chocolate, doing everything from structures like the Eiffel Tower, to carving busts of local celebrities, has prepared me for this,” says Supplee. “I understand the properties and limits of the things I can do with chocolate. It was a good project for me at this point,” he continues, “Just when I think I’ve pushed the limits of food, a project like this comes along to push me harder.”
Trained in Lucerne, Switzerland, Supplee began his career with LFHI in 1985. He has received numerous local and national awards and has been the originator of creations such as blown sugar ornaments for the White House Christmas tree. He’s part of the team of culinary experts who continuously guide Byerly’s to the cutting edge of food. Byerly’s stores range in size from 60,000 to 80,000 square feet and are marvels of service, selection and tasteful design. They are famous for their extensive in-store services such as post offices, banks, espresso shops, pharmacies, wine and spirit shops, and an airline ticket counter.
Schokinag chocolate and cocoa products are available from Schokinag North America, based in Bakersfield, CA, with seven warehouse locations in the U.S. and Canada. It’s a fully owned subsidiary of Schokinag Schokoladen Industrie in Mannheim, Germany.

Chocolate mints shine for Rocking Chair Confections
Allentown, PA – Rocking Chair Confections Olde Country Foil Wrapped Mints offer their gourmet appeal to independent specialty gift and collectable shops, with help from Multifilm Packaging Corp.’s metallized twist wrap. The product’s total package includes a window bag with a fabric bow and hang tag, a wire rocking chair with porcelain bowl filled with chocolates, and a limited edition signed and dated basket filled with the chocolates.
The metallized twist wrap (MTW) from Multifilm is 1.4 mil, printed in three colors. This particular film was selected because of the consistency needed for high-end packaging.
According to Kim Michael, spokesperson for Rockingchair Confections, “We chose this twist wrap for its aesthetic appeal to the high-end specialty shops. It gives our chocolate a ‘gift’ look. In the gift market, because of this wrap, our chocolates are percieved not only as a chocolate but also a gift item.”
Along with the visual appeal, the MTW also “maintains well on the machines” Michael says. She adds proudly that a portion of the Rocking Chair Confection profits are donated to Senior Citizens’ groups.

Virtue Perfume Inspires Elegant Bottle, Custom Box
Elegant shouldered bottle in custom box launches Virtue fragrance. With formula inspired by Biblical descriptions, fragrance described as “world’s first spiritual perfume” serves as reminder of God, Christ, spiritual self, soul, according to Rick Larimore, CEO of IBI, Orange, CA. “Almost every religion and spiritual system worldwide acknowledges that many individuals of high spiritual attainment give off a fragrance attributed to their virtue,” says Larimore. Indeed, package design follows similar path, with choice of bottle, box each serving unique purpose. “We couldn’t find a bottle at first,” Larimore explains, adding, “We just fell into it. Barney’s then told us, ‘Bottles with shoulders sell more perfume.’ The box itself is unique,” he adds, “We were looking for a special finish … and Thoro brought vendors in to help,” he recalls. Resulting high-gloss ultraviolet coating with matte pearlescent finish feels like porcelain, but, he says, has “a sheen that has a purity to it.” Enhancing product’s spiritual message, “You cannot see the logo unless light hits it, literally,” says Larimore.
